Father's Day Food Wise

We had such a good day! We started to day with a yummy breakfast skilled, I love making food... 
Making food Brett's been craving and loves makes me even happier! We've been loving on potatoes lately, white and sweet potatoes! 
But I made him a yummy skillet with mushrooms, bacon, ham, onions, potatoes, black beans and corn and some ooey-gooey cheese on top! We ate it on corn tortillas! Yumm! 
Then we got all cute for church, which we got to early this Sunday! All because I told Brett a few weeks ago how much I hate being late to and sitting in the back. I just feel like I don't get much out of it if we're sitting in the back, I get way too distracted! Anyways, I'm grateful for Brett! He pays attention to the little things, like getting to church on time or little things I say. It means so much to me when people notice the little things. I sure love that man! 


After church, we made dinner! I love cooking you guys! Seriously, it's silly but I just kept telling Brett how happy I was. I was just so excited to be making something completely different and feeling like it was gonna turn out so good! 
Earlier this week I gave Brett 4 options for his Father's Day dinner... And he chose the only option I had never made before!! 
BBQ ribs and Mac. 
It was exciting for me to find a bunch of recipes and study them out to see how to cook such things. 
I went all out. :) 

Our menu 
Teriyaki BBQ Ribs 
PepperJack Mac n Cheese 
Veggie bake 
Cornbread 
Corn on the cob 
Fruit Salad- by Dana 

Here's the BBQ Ribs recipe I came up with :) 

Marinate ribs in Teriyaki sauce over night. 
Drain marinade, brush ribs with Sweet Baby Rays, cover tightly in foil. Bake in oven for 2-3 hours at 350 

Side note- next time I plan on putting it in the oven 5-6 hours ahead and doing a slow cook. 

After your 2-3 hours, remove foil, more BBQ and back to oven for 20 minutes or so. To get that sticky, yummy goodness! 

Pepper Jack Mac n Cheese

Boil your favorite noodles until all dente. We used bow ties for Father's Day :) 
Drain noodles. 

Then make a bechamel sauce (simple white cheesy sauce) 
Here's how: 
Melt butter, add spoon of flour. Cook the flour. Then slowly add milk as you whisk the butter, flour mix. It will be a thick creamy milk. Add some Parmesan. 
Then add your cheese. I used 2 cups pepper jack, 2 cups mozzarella. 

Add your noodles to your cheesy sauce, mix well. 
Put in oven proof pan, add some bread crumbs and Parmesan to top. Bake until golden brown at the top :) yumm 

It was all dee-lish! Brett approved and friends approved! 
Have I mentioned that we have made some good friends? 
We end up hanging out a lot on Sundays! We're so glad we have some good people out here with us!
